Vinaigrette of pumpkin seeds

PREPARATION
Toast 100 grs. of pumpkin seeds. Grind them and mix with 4 spoonfuls of pumpkin puré, a chopped clove of garlic and a spoonful of cardomon.
Season and add a cup of Aliño sherry vinegar. Cook stirring constantly. Take off the heat and add a cup of Aliño extra virgin olive oil, beating the mixture well.
Ideal for rice salads.
